Baked goods — crusty breads and rolls, the layer cakes called torten, the simpler cakes called kuchen, and more — play a vital role in everyday life in Germany, notes Luisa Weiss, author of the new “Classic German Baking” (Ten Speed Press, $35). Weiss writes the blog The Wednesday Chef, and she previously wrote a memoir with recipes about moving to Berlin from America, “My Berlin Kitchen.”
